prep idea nuts

I had some pecans left over from a year ago (in the shell) stored in cabinet. They are still good, some are getting an off taste though. Might be a good thing to bulk up on. Right now they are selling locally in my erea for $1.00 pound from home growers, compared to wmart 2.79 pound, and they taste better, the one's at walmart always seem to be have dried out.

Yep, all nuts being high in oils tend to go rancid quickly. Putting them in the freezer helps, or long term storage with C02 and O2 absorbers, then put in a cool place.

yes, but it might be worth it to stock up on nuts leaving them in the shell, as they appeared to me to go about 3-9months before any off taste. That saves a lot of freezer space if you are limited. That isnt too bad. Maybe freeze some more already shelled for for longer term.

I think they are still "alive" for quite a while a will not go rancid in the shell, once shelled they go quickly.

Exactly, once the shell is broken/removed they are exposed to oxygen and the breakdown begins.
